Instant Pot Meatloaf and Potatoes
Hey Y’all!
So, during the last Black Friday event, I joined the Instant Pot fad, and bought one. I’m new to the pressure cooker movement and have been looking for some easy and awesome recipes to get my feet wet. As full-time working mother of two babies, 2 years old and under, I fall in love with recipes that are easy to make and delicious.
I’m always a little hesitant to try out new recipes, because (and I know we have all been there), half of the time, they don’t turn out. Well this meatloaf and potatoes recipe will blow you away! It turned out so great that there were no leftovers!
So if you’re someone who owns a pressure cooker, and doesn’t have a ton of extra time to dedicate to cooking, this recipe is for you!
The potatoes were SOOOOOO easy to mash, the meatloaf was so delicious, this recipe will absolutely be placed into my rotation of meals for my family.
So here are my instructions! Enjoy!
Jump to RecipeStep 1: Wash and cut yellow yukon gold potatoes. I cut my potatoes in half and then in fourths. I had about 11 small to medium yukon potatoes, and I felt like I needed a little bit more, so I added 2 large (peeled) russet potatoes. Lay them in the bottom of you Instant Pot. Add 3 cups of water, 1 bay leaf, and 1 tsp kosher salt, and 2 garlic cloves (peeled).
Step 2: Place trivet on top of potatoes with handles facing up. Place a layer of foil on top.
Step 3: In a bowl, combine your 2 pounds of meat ( I used 1 pound of beef and 1 pound of ground turkey), 2 tsp garlic powder, 2 tbsp Worcestershire sauce, 2 eggs, 1/2 tsp black pepper, 1/2 cup Italian seasoned bread crumbs, and 1/2 cup bbq sauce. Mix thoroughly.
Step 4: Place the meat on top of the foil in the Instant Pot, shaped into two logs, side by side.
Step 5: Place lid onto the Instant Pot, and twist to secure. I was nervous that I had used too many potatoes because the handles of my trivet were sticking up too high, but it all still fit with the lid on so no worries! Set the Instant Pot to high pressure for 25 minutes. The valve needs to be set to sealing. Keep in mind the Instant Pot will need about 10-15 minutes to pressurize before it starts counting down the 25 minutes.
Step 6: When the timer goes off, do a quick release. Lift the trivet out of the pot and slide the foil with your meatloaf onto a pan. Baste meatloaf with bbq sauce and place pan into oven set to broil for 2-5 minutes. I know it doesn’t look pretty in the picture, but it tastes divine!
Step 7: Strain excess water from the potatoes. Remove the bay leaf and mash the potatoes with a potato masher. They were so soft! Add in 6 tbsp butter, 1/2 cup sour cream, and 1/2 cup milk!

- 1/2 cup sour cream

Recipe Notes
I used my 8 quart Instant Pot Duo for this recipe.
For 5 adults, we did not have any leftovers with this recipe.
